Gourmedilla

Craving pizza rolls, but the fridge has nothing in it eh? Well, let’s see what we’ve got.
Ah, buried frozen caprese sausages a little cheese and tortillas?
I can make that work 😉

This quesadilla literally tastes like a pizza roll.

Ah, welcome back to another CaféBudgét dinner!

On the menu for tonight is the Gourmedilla (Gourmet Quesadilla).

Included in this dinner is:

For your side, you may choose:

  • Cheese chips (if you aren’t tired of cheese! This recipe will be posted tomorrow at 11am)
  • Veggie bowl (Broccoli, Zucchini, and corn)

Let’s get started!

Veggie Bowl

If you choose a veggie bowl side, and are using frozen vegetables, it is best to start that first.

Take a pot and fill with some water to cover about half of the veggies. Put any frozen vegetables in first and set on the stove at high/high-medium heat to unfreeze vegetables. Cut any fresh vegetables in the meantime.

Add salt to taste.

Set to medium-low and put in un-frozen vegetables. Cook until all vegetables are as soft as you want them.

When served, I add either butter or garlic powder to the variety.

Gourmedilla–The gormet “pizza roll” quesadilla

For each quesadilla, you will want 1-2 tortillas, depending on how hungry you are.

Take a cast iron pan, if you have one, and heat it up. I like to turn it up to high for about 40 seconds and then turn it down to low–to get it warmed up.

Put your tortillas on your pan and let them warm. During this time, get out one sausage per full quesadilla (half per one tortilla). This will completely fill your quesadilla. Take it out of the plastic and wrap it in a wet paper towel. Microwave it for 30 seconds.

While your sausage is microwaving, flip your tortillas and pour cheese onto a tortilla and spread it around.

Remove your sausage from the microwave. It should still be a little cold in the center.

Cut the sausage into coins and set them around your quesadilla on top of the cheese. Cover with tortilla.

Let this cook until the cheese is nice and melted.

Remove from the cooktop and let it cool a little before cutting. This is when I would start my cheese chips. (Recipe will be posted tomorrow, Jan 14 @ 11:00am).
